In Asia, noodle cuisine occupies an important place in both the traditional and modern diets.Udon's foots can be traced back over 1,000 years to the early 9th century, when a Japanese Buddhist priest brought the method of making wheat-based noodles back from Tang-dynasty China. Udon noodle is white and the thickest noodles (sometimes about 4-6 mm wide). Udon noodle is made by kneading wheat flour, salt, and water. It can be eaten either hot or cold and can be cooked in many ways. Cold udon noodle is especially popular in hot times.

Udon noodles have almost no fat and are an excellent source of carbohydrates, while the accompanying soup or thin sauce and condiments offer an array of subtle flavors and healthy ingredients. Because of its nutritional qualities, men, women and people of all ages enjoy Udon dishes.

Soba noodles are made of buckwheat flour , which gives it a dark brownish-gray color. They are roughly as thick as spaghetti and prepared in various hot and cold dishes. Buckwheat is a grain that has been consumed for hundreds of years in the northwest parts of China. It has a nutty, earthy flavor. Because buckwheat is rich in nutrients, such as fibrin,amino acid, and microelement, especially protein, it has the functions of maintaining the capillary vessel's smooth,and preventing and curing obesity.

The most basic soba dish is zaru soba in which boiled, cold soba noodles are eaten with the soya based dipping sauce. Like pasta, soba noodles are available in dried form in supermarket.Soba making has also become a popular tourist attraction for domestic and international travelers.

Tips: How to make Soba Noodle Salad
Cook soba noodles in a large pan of boiling water about 5 minutes. Drain and rinse with coldwater. Combine noodles, scallions and parsley in a bowl. Combine next 4 ingredients in a separate bowl. Then mix in miso, working out the lumps with the back of a spoon. Thin if necessary with a little water, drop by drop. Combine with noodle mixture and chill. Garnish with sesame seeds.
