Longkou vermicelli" is a native product of China, it was such named as it was shipped from Longkou Port in history. It has a long production history of more than 300 years.
At the end of Ming Dynasty, general vermicelli was produced with sweet potato. When Daoguang was the emperor of Qing Dynasty, green bean came to be the raw material of vermicelli. Longkou vermicelli has a special and interesting making procedure: it involves soaking green bean, milling the soaked bean to prepare a paste, which will be fermented to obtain starchy. This is the most significant and complicated step to produce excellent vermicelli. After fermentation and processing, the paste, together with water and flour, is put above the boiling water, dripping through apertures of iron equipment and cooked into vermicelli. In a minute, vermicelli must be sought out, kneaded and at last exposed to the sunshine. All the production line is to promote the grade and quality of Longkou Vermicelli, and thus makes it a perfect "Green Food" brand.
